November winner: Jennifer’s Supersize Me cupcakes

Supersize Me cupcakesFor November’s American theme, Jennifer won with Best in Show with these stunning Supersize Me cupcakes!  The realistic burger cupcakes are actually banana and peanut flavoured – yum.

For the Banana cupcakes

  • 120g butter
  • 225g caster sugar
  • 2 eggs
  • 1 tsp vanilla extract
  • 225g mashed bananas (about 4)
  • 120g buttermilk
  • 250g plain flour
  • 1 tsp baking powder
  • ½ tsp salt
  1. Cream together butter and sugar
  2. Combine eggs, vanilla, banana and buttermilk then stir into the mixture
  3. Combine flour, baking powder and salt then stir into the mixture
  4. Divide mixture into 12 muffin cases (or more for cupcake cases) and bake for about 20 minutes at 175°C

Chocolate cupcakes

You can use any chocolate cupcake recipe you want – Jennifer used this one.

Peanut butter frosting

  • 115g smooth peanut butter
  • 115g butter
  • 375g icing sugar
  • 2 tsp vanilla extract
  • 2-4 tbsp whole milk
  1. Beat butter and peanut butter until smooth
  2. Gradually mix icing sugar and vanilla extract with the butter
  3. Add in milk a tbsp at a time with icing sugar to get desired consistency

To assemble

  1. Cut cupcakes into thirds and swap middle sections of banana and chocolate cakes (this   leaves many spare “reverse burgers” if people can’t wait to eat the finished product!)
  2. Divide frosting and mix with red, yellow or green food colouring (I use paste colouring)
  3. Optional: use chocolate ganache/melted chocolate to stick the bottom “bun” to the burger
  4. Spread green frosting roughly over the top of the “burger” using a palette knife, leaving a small amount sticking out at the edges
  5. Using  piping bags with a small round nozzle place squiggles of red and yellow frosting over the edges of the green
  6. Replace the top bun and use a brush to slightly dampen the surface with water before sprinkling over sesame seeds
